I see a lot you guys doing a commom mistake when saying your favorites vegetables.. you mentioning fruits instead..

Tomato, eggplant, zucchini, cucumber, peppers, pumpkin, pod, okra and many others are fruits and not vegetables ^_^

If you are talking in a botanical context, pumpkin, tomato, pepper or cucumber are considered fruits, because they all contain seeds. However, If you are talking about culinary terms, in my opinion they can be appropriately called vegetables.

What are the vegetables?
"Vegetable" is a culinary term. Its definition has no scientific value and is somewhat arbitrary and subjective. All parts of herbaceous plants eaten by humans, whole or in part, are generally considered vegetables.
However the vegetables include:
LEAVES (spinach, celery, lettuce, cabbage),
STEM (asparagus, celery, rapeseed),
FLOWERS (broccoli, artichokes, cauliflower),
FRUITS (tomato, pumpkin, cucumber, zucchini),
SEED (peas, beans),
TUBES (radish, beetroot, carrots, potatoes, turnip),
BULBI (garlic, shallot, onion).
